You get to enjoy a lot of great foods, great friends, and the warm weather that is a great part of the season. When you are ready to have some people over, you need to make sure that you have all of the best recipes prepared. Green Olive and Tomato Salsa

Ingredients:
¼ tsp. pepper
¼ tsp. salt
2 tsp. minced oregano
1 Tbsp. vinegar, red wine
¼ c. hot pepper relish
1 bunch scallions, sliced
¼ c. green olives, sliced
1 ¼ lbs. tomatoes, diced

Directions:
1. To start the first of the healthy dip recipes, bring out a bowl.
2. Combine the pepper, salt, oregano, vinegar, relish, scallions, olives, and tomatoes. Mix around and then serve.

Middle Eastern Dip

Ingredients:
1 tsp. sumac
1 tsp. oregano
1/3 c. feta cheese, crumbled
1/3 c. Kalamata olives, sliced
1 chopped tomato
1 c. English cucumber, chopped
1 c. Greek yogurt, plain
1 container hummus

Directions:
1. Bring out a cooking dish and spread out the hummus on the bottom.
2. When this is done, layer the feta, olives, tomato, cucumber, and yogurt on the top.
3. Right before you use, top with the sumac and oregano before serving and enjoying.

White Bean and Garlic Dip

Ingredients:
Bean dip
1 tsp. lemon juice
1 can rinsed cannellini beans
½ tsp. salt
1 ½ c. onion chopped
Oil
½ c. olive oil
1 ½ c. canola oil
4 garlic heads
4 c. water

Directions:
1. Make the oil first. Bring some water to boil and then take it from the heat. Add in the garlic cloves and stir around.
2. Let this stand so the garlic becomes soft for around 50 minutes. Strain out the garlic and then cut away the head of the garlic.
3. Place the oils in a pan and bring to a simmer. Simmer until it is golden and soft which takes 50 minutes and then let stand.
4. Move to a blender and puree to make smooth.
5. Combine ½ cup of the oil with the salt and onion and cook for 9 minutes.
6. Add the beans and cook another two minutes. Stir with the rest of the ingredients and stir.
